Potassium Sorbate

A preservative used in the production of many food and drink products, holding E number E202.

Overview

Odourless and tasteless, potassium sorbate is produced synthetically. Many products are processed using this chemical additive in order to prevent spoilage by microorganisms and extend shelf life.

Potassium sorbate is very soluble in water and remains stable even at high temperatures. It dissolves into sorbic acid, the active antimicrobial agent responsible for the preservative qualities.

In solid form, potassium sorbate holds a granular appearance. Liquids appear colourless to pale yellow.
